2 lb Chicken breast
1 cup Flour
4 cloves Garlic
1 bunch Parsley
4 oz Sun-dried tomatoes
3 tbsp Extra Virgin Olive Oil
1 cup White wine
Salt and Pepper: to taste
Method: Scaloppine
1.
Slice the chicken breast (lay the palm of your hand on top of the breast and draw a sharp knife through the midsection producing two half breasts)

Place the chicken slice between two sheets of parchment paper and pound it with a meat mallet. Repeat the process until you’ve gotten the chicken to the desired thickness – generally about a 1/4 inch thick

Mix flour, salt and pepper in a bowl and dredge chicken pieces in the flour mix

In a pan, heat oil and garlic on high heat. Add the chicken pieces and turn heat down to medium. Cook for 5 minutes, turn the chicken pieces over, add parsley and cook for another 5 minutes
5.
Turn heat to high, add white wine and sun-dried tomatoes and cook for 2 minutes
